Marbré Sips began behind a local café espresso bar, grew through business school study sessions and third-year exchange trips between Vienna and Toulouse, and came to life in just three months when we built a custom mobile coffee cart from the ground up.
How did Marbré Sips start as a student-run mobile coffee cart?
Marbré Sips was born from a shared love for specialty coffee, a friendship built behind an espresso bar, and two business students determined to build something of their own. Our story started working side by side as baristas at the same café, where we fell in love with the rhythm of dialling in espresso, pouring latte art, and turning a two-minute coffee order into the best part of someone's day.
Soon after meeting on shift, we realized we were attending the same university to study business. Between classes, late-night exam prep, and study sessions over iced lattes, we spent almost all of our time together—and almost every conversation circled back to the same dream: "One day, we have to open our own café or build a business doing what we actually love."
How did our semester on exchange in Vienna and Toulouse inspire the brand?
During the second semester of our third year, going on exchange in Europe—Chiara in Vienna and me (Prakriti) in Toulouse—turned our casual daydream into a serious vision. Even though we were studying in different countries, we met up constantly to travel across Europe together, making lifelong memories and experiencing some of the world's most iconic coffee cultures firsthand.
From historic Viennese coffee house traditions recognized by UNESCO to tucked-away espresso bars in southern France, we saw how coffee brings people together when thoughtful presentation meets genuine hospitality. By the time we flew home to Ontario after exchange, the idea of launching a business together wasn't just a "someday" conversation anymore—we were ready to start right now.
Why start a mobile coffee cart instead of a brick-and-mortar café?
Starting a mobile coffee cart instead of a traditional brick-and-mortar café allowed us as full-time university students, to invest our budget directly into a custom-built cart, a high-end commercial espresso machine, and a commercial grinder rather than a heavy commercial lease. As business students, we looked closely at the numbers and realized a mobile espresso bar gave us the best of both worlds: low fixed overhead and the freedom to bring café-quality drinks directly to Ontario's most meaningful celebrations.
